Las Damas de San Ignacio
From the highlands of San Ignacio, Peru, our latest Roaster’s Choice highlights the work of Las Damas de San Ignacio, a group of women coffee producers within the COOPAFSI cooperative. Carefully cultivated and fully washed, this organic, Fair Trade coffee delivers a beautifully balanced cup with notes of Baked Apple Pie, Chocolate Truffles, and Caramel. Roasted light-medium (City+) to showcase its natural sweetness, gentle fruit character, and rich chocolate finish. A comforting, approachable coffee with a story worth sharing.

Roaster’s Choice isn’t built around monthly drops. It changes whenever we bring in a coffee that stands out—small-lot, seasonal, or just too good to skip.
Each release runs for a limited window and is tied to a specific lot reference. Once it rotates out, it’s archived here and replaced by whatever’s next.
