Roaster's Choice 2026

No Schedule. Just Great Coffee.

Roaster’s Choice is reserved for coffees that earn the spotlight. There’s no fixed schedule—just what’s tasting right. Selections rotate based on what we’re sourcing and what stands out on the cupping table. Each release is tied to a specific lot and roast window, giving you a clear line from your cup back to origin, process, and producer. Current selections are featured up top. Everything else moves to the archive below.

SIMBAI BALUS KOPI

Papua New Guinea Papua New Guinea flag
LOT-13-26 • Fully Washed

Remote, rugged, and unlike anywhere else in the coffee world, Simbai Balus Kopi comes from Papua New Guinea's isolated Simbai Valley, where coffee's journey begins long before it ever reaches a roaster. Grown by thousands of smallholder farmers in the shadow of the Bismarck Range, this coffee is produced in a region so remote that harvested coffee must often be carried by foot to local airstrips before being flown out of the mountains—earning it the nickname "Airplane Coffee."

The cup is rich and deeply satisfying, opening with notes of green grape and plum before settling into layers of roasted hazelnut, cocoa, and dried fruit sweetness. A heavy body and clean finish create a profile that's both comforting and complex, showcasing the unique combination of volcanic soils, high elevations, and traditional farming practices that make Papua New Guinea one of specialty coffee's most fascinating origins.

How Roaster’s Choice Works

Roaster’s Choice isn’t built around monthly drops. It changes whenever we bring in a coffee that stands out—small-lot, seasonal, or just too good to skip.

Each release runs for a limited window and is tied to a specific lot reference. Once it rotates out, it’s archived here and replaced by whatever’s next.

Why This Coffee Matters

  • Every bag is tied to a specific lot and roast date.
  • Full context including origin, process, tasting notes, and producer.
  • A direct line from what you’re drinking back to where it came from.
  • An evolving archive so you can track what you’ve had and what stood out.
