ORGANIC JAVA TAMAN DADAR: DEEP, SWEET + BUILT FOR BODY

A wet-hulled coffee from Java with brown sugar, dark chocolate, vanilla, low acidity, and a seriously full body.

01 BROWN SUGAR
02 DARK CHOCOLATE
03 VANILLA

Our next Roaster’s Choice takes us to Java, Indonesia, and a cooperative of approximately 150 producers farming across Kayumas and Taman Dadar.

BROWN SUGAR • DARK CHOCOLATE • VANILLA

Organic Java Taman Dadar moves us in a completely different direction from the brighter, fruit-forward coffees that have come through Roaster’s Choice recently.

Low acidity. Very high body. Deep sweetness.

This one is built around depth and comfort.

That contrast is what got our attention.

THE PEOPLE BEHIND THE COFFEE

KOPERASI SERBA USAHA

Koperasi Serba Usaha was established in 2015 and brings together approximately 150 coffee farmers across Kayumas and Taman Dadar in Java.

Farms average roughly 2 to 2.5 hectares, and the cooperative includes producers spanning first through fourth generations.

That mix matters. Some members are relatively new to coffee farming, while others are continuing a much longer family connection to agriculture.

Coffee is also only one part of the picture.

Many members cultivate avocado, ginger, green beans, durian, and tobacco alongside coffee, helping diversify income outside the coffee harvest.

This is not one large estate producing one uniform crop.

It is a network of small farms working together around quality, production, and access to market.

WET HULLED + PATIO DRIED

Organic Java Taman Dadar is processed using the wet-hulled method associated with Indonesian coffee production.

PREPARED FOR EXPORT

The finished cup is noticeably different from the brighter coffees we have featured recently.

Instead of high acidity and pronounced fruit, this lot leans into weight, chocolate, sugar, and texture.

The importer evaluation for lot RNY#63280 describes the coffee as low in acidity, very high in body, and average in sweetness.

That huge body is the thing that immediately separates it.

WHAT DOES IT TASTE LIKE?

01

BROWN SUGAR

Deep, rounded sweetness that gives the coffee its foundation. Less bright and candy-like, more warm and caramelized.

02

DARK CHOCOLATE

The dominant deeper note in the cup. Dense cocoa character pairs naturally with the coffee’s very high body.

03

VANILLA

Softer sweetness underneath the chocolate and brown sugar, helping round out the finish without taking away from the coffee’s weight.

This is not a coffee built around sharp acidity or wild fruit.

The experience is deeper, smoother, and heavier.

And no, none of those flavors were added to the coffee.

Tasting notes are sensory references we use to describe what we naturally find in the cup.

Roaster’s Choice should not stay in one lane.

Sometimes the coffee that makes the most sense is bright, floral, and fruit-forward.

Sometimes it is the complete opposite.

Organic Java Taman Dadar gives us chocolate, brown sugar, low acidity, and a ton of body.

That swing in flavor and structure is exactly what makes the rotating program interesting.

HOW WE'RE ROASTING IT

MEDIUM-DARK

We are taking Organic Java Taman Dadar deeper than our recent Roaster’s Choice releases.

There is already plenty of body in the green coffee, so our job is not to manufacture weight.

We want to develop the dark chocolate and brown sugar, preserve the coffee’s naturally full texture, and leave enough room for the softer vanilla character to stay present.

Push it too light and we miss what makes this lot interesting.

Push it too far and we risk flattening everything into roast.

The target is depth without losing character.

COFFEE NERD CORNER 🤓

If you want to dig into the details, here is what is under the hood.

01

JAVA, INDONESIA

This coffee comes from the Kayumas and Taman Dadar areas of Java, one of Indonesia’s major coffee-producing islands.

02

1,000–1,500 MASL

The farms represented in this lot span a fairly wide elevation range. Elevation is one part of the bigger picture that also includes variety, processing, climate, and roast.

03

CATIMOR • TYPICA

These are the coffee varieties represented in the lot. Their expression in the cup is shaped by the farms, processing, and roast just as much as the variety names themselves.

04

WET HULLED

Wet hulling is strongly associated with Indonesian coffee production and contributes to a very different physical and sensory profile than the natural and washed coffees we often feature.

05

VERY HIGH BODY

The importer evaluation places this lot at the very high end for body. That dense, coating texture is one of the defining features of the coffee.

06

LOW • RICH • SMOOTH

Low acidity, very high body, and a profile centered on brown sugar, dark chocolate, and vanilla. That is the structure we are aiming to preserve through the roast.

HOW WE WOULD BREW IT

This coffee naturally favors methods that let its body and deeper sweetness stay front and center.

01

FRENCH PRESS

Probably the most natural fit. The immersion brew keeps the body intact and lets the chocolate and brown sugar really settle into the cup.

02

DRIP

Easy everyday brewing. Rich, smooth, and approachable without losing the coffee’s heavier texture.

03

MOKA POT

Dense and concentrated. A good way to lean into the cocoa and brown sugar side of the profile.

04

ESPRESSO

Heavy body and deep sweetness make this an interesting option when you want espresso with weight rather than brightness.

WHY IT MADE ROASTER’S CHOICE

Roaster’s Choice exists so we can keep moving.

We are not trying to find twelve versions of the same coffee.

Organic Java Taman Dadar gives us something completely different from the brighter coffees that have come through the program recently.

A cooperative of approximately 150 producers.

A wet-hulled Indonesian coffee.

Low acidity and very high body.

A cup driven by brown sugar, dark chocolate, and vanilla.

That change of pace is exactly what the program is for.

That is why it is roasting now.
