Our next Roaster’s Choice takes us to Tanzania’s southern highlands and GD Mwangoka Farm, a Tanzanian-owned estate with more than two decades of family stewardship behind it.

This is a natural-process coffee with the fruit we want, but without the muddy, over-fermented edge that can sometimes come with that style.

Bright acidity. Medium body. Clean structure.

Big fruit. Clean cup.

That balance is what got our attention.

THE PLACE BEHIND THE COFFEE

MWANGOKA FARM

GD Mwangoka Farm sits in Mbozi, in Tanzania’s Songwe region, part of the country’s southern highlands.

The Grivas family took stewardship of the farm more than 20 years ago, and today the estate is under second-generation management.

That already makes Mwangoka interesting. Large coffee estates are not the dominant model in Tanzania, and Mwangoka is one of the relatively few Tanzanian-owned estates operating at this scale.

The farm covers roughly 400 hectares and employs more than 200 seasonal workers during the coffee cycle. It also works alongside and supports a network of smallholder producers in the surrounding area.

This is not just “coffee from Tanzania.”

There is an actual farm, family, and place behind it.

The estate also sits near the Mbozi meteorite, one of the largest meteorites known in Tanzania. It is not why we bought the coffee, but it is a pretty great geographic detail.

Mwangoka is processed as a natural coffee, but before we get into what that means, the actual handling matters.

Unlike washed coffee, the fruit is not removed immediately after picking.

The coffee dries inside the whole cherry, giving the fruit and seed considerably more time together before the coffee is milled.

During drying, the cherries are turned regularly to help keep things even.

That extended fruit contact can create a lot of fruit character.

What caught our attention here was how clean the finished cup remained.

You get the strawberry and grape character we want from a natural, but the coffee still has clarity and structure.

WHAT DOES IT TASTE LIKE?

STRAWBERRY

This is the obvious fruit note. Ripe and sweet rather than jammy, boozy, or heavily fermented. It is the first thing that gives the coffee its personality.

WHITE GRAPE

This is where the brightness lives. Juicy, crisp, and clean. It gives the acidity a more specific reference than simply calling the coffee citrusy.

CANE SUGAR

The sweetness underneath everything. Cane sugar keeps the fruit balanced and prevents the brighter side of the coffee from feeling sharp.

As the cup cools, you may also find some orange and tea-like character underneath the main profile.

And no, none of those flavors were added to the coffee.

Tasting notes are sensory references we use to describe what we naturally find in the cup.

A great natural does not have to be loud, funky, or messy.

Natural coffees can go huge.

Sometimes that means wild fruit, heavy fermentation, and a lot of funk.

This one is different.

The fruit is absolutely there, but the cup still has structure.

That is what makes Mwangoka interesting to us.

HOW WE'RE ROASTING IT

LIGHT ROAST

We are keeping Mwangoka on the lighter side.

There is already plenty of fruit in this coffee, so our job is not to manufacture more of it.

It is to develop enough sweetness to support the cup while preserving the strawberry, white grape, and bright acidity that made us choose it in the first place.

The Roaster’s Choice before this, Tica Linda, leaned deeper with dark chocolate, brown sugar, and pink grapefruit.

Mwangoka swings the program back toward a lighter roast, brighter acidity, natural processing, and a more fruit-forward profile.

That contrast is exactly what Roaster’s Choice is supposed to do.

MBOZI, SONGWE

Mwangoka Farm is located in Tanzania’s southern highlands in the Mbozi area of Songwe. This is the specific farm and place behind the coffee, not just a generic country-level origin.

1,450–1,850 MASL

The farm spans a fairly wide elevation range. Altitude is not a guarantee of quality, but cooler growing conditions at higher elevations can support slower development and more structure in the cup.

BOURBON • COMPACT

These are the varieties represented in the coffee. For most drinkers, the bigger takeaway is how the varieties, environment, processing, and roast all come together in the finished cup.

NATURAL PROCESS

The coffee dries inside the whole cherry before milling. That creates longer contact between fruit and seed and can support the fruit-forward character we are getting here.

85.75 CUP SCORE

The coffee scored 85.75 on the importer’s cupping evaluation. Useful context, but not the reason we bought it. We care more about how the coffee actually drinks.

LIGHT • BRIGHT • CLEAN

Light roast, bright acidity, medium body, and clear fruit. That is the structure we are aiming to preserve from roast through brew.

HOW WE WOULD BREW IT

This is one of those coffees that gives you a few really good directions depending on what you want to emphasize.

POUR OVER

Probably the showcase method. Clarity lets the strawberry, white grape, and bright acidity really show themselves.

FLASH BREW

This profile should be killer over ice. Strawberry, white grape, and cane sugar make this an easy choice when you want something cold and bright.

DRIP

Easy everyday method. You keep plenty of fruit and sweetness while getting a little more body than a cleaner pour over.

AEROPRESS

Good balance of sweetness and body without muddying the brighter fruit. A strong option if you want the cup a little fuller.

WHY IT MADE ROASTER’S CHOICE

Roaster’s Choice exists so we do not have to force every great coffee into a permanent slot on the shelf.

Sometimes we find a coffee that is simply worth roasting while it is here.

A single farm.

A Tanzanian producer.

A natural process.

A completely different cup from the coffee before it.

That is exactly what this program is supposed to do.

Mwangoka gives us fruit without chaos, brightness without sharpness, and enough sweetness to keep the whole thing grounded.

That is why it is roasting now.
