LAS DAMAS DE SAN IGNACIO: SWEET, BALANCED & COMFORTING
LAS DAMAS DE SAN IGNACIO: SWEET, BALANCED & COMFORTING
An Organic and Fair Trade coffee from the women producers of San Ignacio, Peru, with Baked Apple Pie, Chocolate Truffles and Caramel in the cup.
Our next Roaster’s Choice takes us to San Ignacio, Cajamarca, Peru, and Las Damas de San Ignacio, a group of women coffee producers within the COOPAFSI cooperative.
BAKED APPLE PIE • CHOCOLATE TRUFFLES • CARAMEL
This is the kind of coffee that does not need to shout to get your attention.
Sweet fruit. Rich chocolate. Smooth caramel.
Balanced, comforting, and incredibly easy to come back to.
That combination is what got our attention.
LAS DAMAS DE SAN IGNACIO
This release highlights the work of Las Damas de San Ignacio, a group of women coffee producers within the COOPAFSI cooperative in San Ignacio, Peru.
Located in the Cajamarca region, the coffee carries both Organic and Fair Trade certifications.
The story is part of what drew us toward this lot, but the coffee still had to deliver in the cup.
It does.
Baked apple sweetness, rich chocolate and caramel come together in a profile that feels familiar without being boring.
It is approachable, balanced and exactly the kind of coffee we like finding for Roaster’s Choice.
FULLY WASHED
This release is a fully washed coffee.
For this particular Roaster’s Choice, what matters most to us is the balance it gives us in the finished cup.
The fruit is present without taking over. The chocolate has depth without becoming heavy. The caramel sweetness ties everything together.
Clean, sweet and structured is exactly where we want this one to land.
WHAT DOES IT TASTE LIKE?
BAKED APPLE PIE
Sweet apple is the fruit side of the cup, but it lands softer and rounder than a bright fresh-apple note. Think baked fruit, warm sweetness and a little more depth.
CHOCOLATE TRUFFLES
Rich chocolate gives the coffee its deeper side. Smooth and rounded rather than bitter, with the kind of cocoa character that makes the cup feel especially comforting.
CARAMEL
The sweetness underneath everything. Caramel connects the baked fruit and chocolate while keeping the finish smooth and balanced.
None of those flavors were added to the coffee.
Tasting notes are sensory references we use to describe what we naturally find in the cup.
Some coffees win you over with wild fruit, huge acidity or unusual fermentation.
This one takes a different route.
Baked apple, chocolate and caramel come together in a cup that feels complete from the first sip.
There is plenty going on, but nothing is fighting for attention.
That balance is the whole point.
LIGHT-MEDIUM (City+)
We are starting this release at a light-medium roast.
The goal is to develop enough sweetness to bring the caramel and chocolate forward while keeping the baked apple character clear in the cup.
We do not want to roast away the fruit, but we also do not want the coffee so light that the sweeter, richer side never gets a chance to develop.
Sweetness first. Fruit intact. Chocolate underneath.
COFFEE NERD CORNER 🤓
If you want to dig into the details, here is what is under the hood.
SAN IGNACIO, CAJAMARCA
This release comes from San Ignacio in Peru’s Cajamarca region, giving us a more specific place behind the coffee than simply putting Peru on the bag.
LAS DAMAS DE SAN IGNACIO
The coffee highlights a group of women producers working within the COOPAFSI cooperative.
FULLY WASHED
This lot is processed as a fully washed coffee. For us, the result is a cup where the fruit, chocolate and caramel notes can stay clearly defined.
ORGANIC
This coffee carries Organic certification as part of the lot information supplied for the release.
FAIR TRADE
The lot is also Fair Trade certified, adding another piece of context to how this coffee reaches the market.
LIGHT-MEDIUM
Our starting roast direction is light-medium, aimed at balancing the baked fruit character with the deeper chocolate and caramel sweetness.
HOW WE WOULD BREW IT
This is a coffee we would start with on filter, where the baked apple and caramel sweetness have plenty of room to show themselves.
DRIP
Start around 60 grams of coffee per liter of water. Balanced, sweet and probably the easiest everyday expression of the coffee.
POUR OVER
Start around 20 grams of coffee to 320 grams of water. The cleaner presentation should give the baked apple and caramel plenty of definition.
FRENCH PRESS
Start around 30 grams of coffee to 500 grams of water. A fuller presentation that should lean a little harder into chocolate and caramel.
WHY IT MADE ROASTER’S CHOICE
Roaster’s Choice exists so we can keep moving through different origins, producers, processes and flavor profiles without forcing every coffee into a permanent place on the shelf.
Las Damas de San Ignacio gives us a completely different kind of release.
A group of women coffee producers in San Ignacio.
Organic and Fair Trade certified.
A fully washed coffee.
Baked Apple Pie, Chocolate Truffles and Caramel.
Nothing about it needs to be overcomplicated.
It is sweet, balanced, comforting and genuinely enjoyable to drink.
That is why it is roasting now.
