TICA LINDA: SWEET, BRIGHT, AND BUILT ON BALANCE

A honey-processed Costa Rican coffee from women producers in Tarrazú, with dark chocolate, brown sugar, and pink grapefruit in the cup.

01 DARK CHOCOLATE
02 BROWN SUGAR
03 PINK GRAPEFRUIT

Some coffees grab you because they are wild. Others grab you because everything just lands where it should.

This one is the second kind.

Tica Linda comes from women producers in Costa Rica’s Tarrazú region, and what pulled us in was the balance.

Dark chocolate gives it depth. Brown sugar brings a rounded sweetness. Pink grapefruit adds just enough brightness to keep the whole thing clean and lively.

Nothing is fighting for attention.

It is sweet, structured, easy to drink, and still interesting enough to make you stop and pay attention.

That is exactly what we want from Roaster’s Choice.

TICA LINDA

This coffee comes from Tarrazú, Costa Rica, one of the country’s best-known coffee-growing regions.

It is produced by various women farmers, grown around 1,600 MASL, and made up of Caturra and Catuai varieties.

The coffee is processed using the honey method, which helps preserve sweetness and body while still keeping the cup clean and bright.

For us, the reason it made the cut was simple.

It had that rare mix of comfort and energy.

The chocolate and brown sugar make it immediately approachable, while the pink grapefruit keeps it from becoming flat or overly heavy.

It drinks like a coffee you can reach for every day, but there is still plenty going on underneath it.

That balance is what sold us.

WHAT DOES IT TASTE LIKE?

You do not need a cupping spoon or a flavor wheel to understand this coffee. Here is what we mean when we put these three notes on the bag.

01

DARK CHOCOLATE

This is the base of the cup. A deeper cocoa character gives the coffee weight and structure without becoming roasty, bitter, or turning the cup into a dark roast.

02

BROWN SUGAR

A softer, rounded sweetness sits between the chocolate and citrus and helps connect the whole cup. This is where a lot of the coffee’s comfort comes from.

03

PINK GRAPEFRUIT

This is the lift. Juicy citrus brightness keeps everything alive without becoming sharp or sour. It is what stops the chocolate and brown sugar from feeling too heavy.

That contrast is what makes the cup work.

Deep enough to feel substantial. Sweet enough to drink every day. Bright enough to stay interesting.

PROCESS MATTERS

WHY HONEY PROCESS?

Honey process sits somewhere between washed and natural coffee.

After the coffee cherry is depulped, some of the sticky fruit material remains on the seed while the coffee dries.

That remaining fruit can help build additional sweetness and body while still allowing the cup to stay cleaner and more structured than many fully natural coffees.

Costa Rica has become especially well known for honey processing, and Tica Linda gives us a really good example of why.

You get sweetness.

You get body.

You still get clarity.

That is the sweet spot.

Here, the brown sugar feels fuller, the chocolate gets more depth, and the pink grapefruit still has enough room to cut through and keep the cup moving.

BEHIND THE COFFEE

THE PRODUCERS BEHIND TICA LINDA

Tica Linda is produced by women farmers in Tarrazú.

Women make up a major part of the coffee workforce, but historically have had less access to resources, support, and market opportunities than their male counterparts.

Tica Linda helps create more visibility and market access for coffee produced by women.

That story matters.

But the coffee still has to earn its place in Roaster’s Choice.

This one did.

We are not carrying it because the story sounds good. We are carrying it because the coffee is excellent, and knowing more about the people behind it makes the story even better.

Coffee first. Always.

COFFEE NERD CORNER 🤓

If you want the details, here is what is under the hood.

01

TARRAZÚ

Tarrazú is one of Costa Rica’s most recognized coffee-growing regions. Higher elevations and a long coffee-growing history help make it a region known for coffees that can balance sweetness with clean acidity.

02

1,600 MASL

This coffee grows around 1,600 meters above sea level. Elevation is not a quality guarantee by itself, but cooler growing conditions at higher elevations can help support slower cherry development and more structure in the cup.

03

CATURRA • CATUAI

These are the two varieties represented here. You do not need to memorize them to enjoy the coffee. What matters is how everything comes together: sweetness, structure, and enough brightness to keep the cup alive.

04

HONEY PROCESS

Some of the coffee fruit remains on the seed while it dries. That can help build sweetness and body while still allowing the finished coffee to stay clean, structured, and defined.

WHY THIS COFFEE WORKS RIGHT NOW

Timing matters with coffee.

We are moving out of the brighter, high-energy coffees of summer, but we are not all the way into the deeper, heavier coffees that tend to feel right later in the year.

Tica Linda sits right in the middle.

Dark chocolate and brown sugar give it enough depth for cooler mornings.

Pink grapefruit keeps it fresh and alive.

Comforting without getting heavy. Bright without feeling sharp.

Interesting without making you work for it.

That is why it fits this rotation so well.

HOW WE WOULD BREW IT

This coffee gives you a few different directions depending on what you want to pull forward.

01

DRIP

Best all-around expression. Chocolate, brown sugar, citrus, and body all show up without one part taking over.

02

POUR OVER

Want more pink grapefruit and clarity? This is the move. A cleaner brew pushes the brighter side forward while keeping the sweetness intact.

03

FRENCH PRESS

More body and more chocolate. French press brings the brown sugar and cocoa forward and gives the coffee a fuller, rounder feel.

04

AEROPRESS

A strong middle ground. Enough body to keep the sweetness present while still allowing the citrus to cut through.

WHY IT MADE ROASTER’S CHOICE

This is exactly why Roaster’s Choice exists.

Not every coffee needs to be rare.

Not every coffee needs to be wild.

Not every coffee needs to come with a ten-paragraph explanation before you enjoy it.

Sometimes the best coffees are the ones where everything simply works.

Tica Linda has depth.

It has sweetness.

It has brightness.

And it has the kind of balance that makes you want another cup before you finish the first one.

That is what got our attention.

And that is why it is roasting now.
