This roast opens with deep, velvety dark chocolate—the kind that coats your palate and lingers with warmth. As it cools, a gentle sugar plum sweetness emerges, adding a soft, rounded depth that keeps each sip balanced and inviting. Underneath it all, a bright note of red apple cuts through, bringing a subtle freshness that lifts the cup and keeps it from feeling heavy.

We’ve roasted this coffee to a confident medium profile, stopping just shy of second crack. That timing allows the natural sugars to caramelize beautifully while preserving enough acidity for structure and clarity. The result is a cup that’s rich and comforting, yet layered and dynamic—perfect for slow winter mornings or long afternoons chasing warmth.
