Tarrazú San Diego - Lactic Anaerobic
Costa Rica continues to push the boundaries of coffee processing, and this lot from Tarrazú is a perfect example. Produced at the historic Beneficio San Diego mill, ripe cherries are carefully selected and undergo lactic anaerobic fermentation. This is a process that intensifies sweetness, complexity, and fruit character while maintaining exceptional clarity in the cup.
The result is a layered and expressive coffee with notes of cherry, apricot, caramel, chocolate, lime, and marzipan. Bright fruit leads the way before settling into rich sweetness and a clean, structured finish.
