Welcome to Roaster’s Choice

“Every coffee has a story. We want you to taste it, trace it, and truly know it.”
Coffee is more than just a drink—it’s an agricultural product shaped by people, place, and process. With our Roaster’s Choice Traceability Program, we’re opening the door to that story. You’ll not only enjoy delicious, curated coffees, but also gain insight into how they were sourced, roasted, and delivered to your cup.
Why Traceability Matters
Traceability is about connecting the dots—from the farm and region where the coffee was grown, to the method used to process it, to the choices our roasting team makes.
-
It shows you who grew your coffee.
-
It explains how it was processed.
-
It reveals why it tastes the way it does.
At Kings Coast, we believe transparency transforms your morning ritual into a learning experience. The more you understand a coffee’s journey, the more you can appreciate the subtle flavors in your cup.
How the Program Works
Roaster’s Choice isn’t locked into a monthly cycle or rigid release calendar. Instead, it evolves naturally based on availability, harvest cycles, and what excites our roasting team at the time. When we come across a coffee that stands out—whether it’s rare, uniquely processed, or just flat-out exceptional—we feature it in Roaster’s Choice.
Every release is tied to a roast date, and that roast date acts as the reference to the lot number of green coffee used. This means your bag isn’t just stamped with a date for freshness—it also serves as a unique identifier that links your coffee directly to its source. Even if a single lot spans across multiple roast dates, they’ll all trace back to the same origin and information.
-
Roast Date / Lot Reference
The roast date printed on your bag doubles as the lot number reference. This connects your coffee back to the exact batch of green coffee it was roasted from—tying your daily brew to a traceable point in our sourcing and roasting history. -
Region
Coffee flavor is rooted in place. You’ll see which country, region, or microclimate your beans came from, helping you understand how geography shapes the cup. -
Tasting Notes
Our cupping team evaluates each selection and highlights the flavor notes that best express its character—whether that’s bright citrus, red fruit sweetness, chocolate depth, or delicate florals. -
Processing Method
Coffee isn’t just grown; it’s also processed after harvest. You’ll learn whether your lot was washed, naturally dried, honey processed, or something experimental—each method leaving its own signature on the final flavor. -
Traceability
The people behind the beans matter most. We share the cooperative, estate, or individual farmer responsible for growing the coffee, giving you a direct connection to the producers whose work makes your cup possible.
Behind the Roast
Our team doesn’t just “pick a coffee.” We evaluate, profile, and roast with precision, guided by both science and sensory analysis.
-
A washed Colombian might bring out bright cherry and citrus.
-
A natural Brazilian could highlight red fruit, apricot, and nutty sweetness.
-
A honey-processed Central American may deliver floral and caramel notes.
By sharing this process, we want you to see coffee the way professionals do—as a product of craft, culture, and environment.
Explore Past Roasts
One of the best features of Roaster’s Choice Traceability is its archive of past coffees. Since each release is tied to a roast date that references the lot number and coffee details, you can easily look back and see exactly what you had.
If a coffee ran across multiple roast dates, it will still point back to the same lot and traceability info—so no matter which date your bag carried, you’ll always be able to connect it to the right coffee story.
Over time, this creates your own personal coffee tasting journal, helping you track which coffees you’ve enjoyed, recognize patterns in your palate, and revisit the origins and flavors that stood out to you.
Join the Journey
“Transparency turns every cup into a discovery.” Roaster’s Choice isn’t just a subscription—it’s an invitation to explore coffee more deeply. From farm to roast to cup, every detail is here for you to enjoy, trace, and learn from.
